With the bountiful harvest of apples in Harvard and surrounding towns, local cooks can be challenged with creative ways to use them. There is only so much apple pie you can eat, right? Well, maybe not. But when life gives you apples, you can also make pizza!
2 teaspoons garlic, minced
2 tablespoons olive oil
1 12-inch prepared pizza dough crust
2 cups fresh spinach, coarsely chopped
1½ cups Red Delicious, Golden Delicious, or Granny Smith apples cored, peeled, and thinly sliced (or chopped)
1 cup shredded low-fat, part skim Mozzarella cheese
½ cup crumbled blue, Gorgonzola, or Roquefort cheese
½ cup shredded Parmesan cheese
1 teaspoon dried oregano
Preheat oven to 450° F. Sauté garlic in olive oil over medium heat for one to two minutes; remove from heat. Brush garlic-infused olive oil, garlic and all, onto pizza crust. Distribute spinach evenly over crust. Cover with chopped apples. Blend all cheeses and distribute evenly over apples; sprinkle with oregano. Bake for 12 to 15 minutes or until cheese boils and crust is brown.
