Fresh Tomato Crostini

Tuscan in origin, crostini are little rounds of toasted bread with any of a variety of chopped toppings. In this recipe, the ingredients are crusty Italian bread, tomatoes, garlic, and fresh parsley. Serve these with some fresh fruit and a nice bottle of wine … a nice chilled white will do. Suitable for a picnic in the Italian countryside or at Bare Hill Pond.

6 plum tomatoes, chopped
¼ cup minced flat-leaf parsley or even basil
2 teaspoons olive oil
1 garlic clove, minced
Freshly ground pepper, to taste
4 ounces crusty Italian bread, cut into 4 slices and toasted

Combine the tomatoes, parsley, oil, garlic, and pepper. Cover and let stand 30 minutes. Divide the tomato mixture, with any juices, among the toast. Serve at room temperature. Serves four.
