Green Beans With Provolone Cheese

Provolone is a good, sharp cheese easily found in the supermarket. In this recipe, the provolone will melt slightly and season the beans deliciously.

1 pound green beans
2 garlic cloves, minced
1½ tablespoons olive oil
½ cup water
½ teaspoon salt
⅛ teaspoon pepper
8 ounces provolone cheese, cut into ¼-inch dice

Cook beans in a large saucepan of boiling salted water five minutes; beans will still be crisp. Drain in a colander and rinse under cold running water. Drain well.

In a large frying pan, cook garlic in olive oil over medium heat until fragrant, about 30 seconds, being careful not to burn. Add beans to pan and stir to coat with oil. Add water to pan and cook, stirring occasionally, three to four minutes, or until crisp tender. Season with salt and pepper.

Remove pan from heat. Add provolone to hot beans and toss. Serve immediately.
