Focaccia with Rosemary and Garlic

This traditional focaccia bread is as delicious as it is fragrant.

1 recipe of your favorite traditional pizza dough or 1 pound of frozen bread dough, defrosted
3 tablespoons olive oil
2 large garlic cloves, minced
2 tablespoons chopped fresh rosemary or 1 teaspoon dried
1 tablespoon coarse (kosher) salt

Preheat oven to 350 degrees F. Brush a 10×8-inch baking pan with 1 tablespoon olive oil. Pat or roll dough to fit pan. Brush surface with remaining 2 tablespoons of oil. Sprinkle garlic, rosemary, and coarse salt over dough. Indent surface of dough by pressing all over with your fingertips. Let dough rise, covered with a kitchen towel, in a warm place (75 to 80 degrees) 45 minutes, or until doubled in bulk. Bake focaccia 30 minutes, or until puffy and lightly golden on top. Serves six.
