Italians love their pork and cheese, and when combining the two you will have a real delicious dinner.
6 pork loin chops, cut one-inch thick, about 10 ounces each
½ teaspoon salt
½ teaspoon pepper
1 cup soft bread crumbs
½ cup shredded smoked mozzarella or smoked Gouda cheese
¼ cup chopped prosciutto or ham
2 tablespoons olive oil
½ cup water
Trim excess fat from chops. With a sharp knife, slit a pocket in meaty part of each chop, cutting toward bone. Season chops with salt and ¼ teaspoon pepper. In a small bowl, combine bread crumbs, cheese, prosciutto or ham, and remaining ¼ teaspoon pepper. Stuff filling into chops; fasten closed with toothpicks. In a large frying pan, heat olive oil over medium-high heat. Add chops and cook, turning once, three to five minutes, or until browned on both sides. Add water and bring to a boil. Reduce heat to low, cover, and cook 20 to 30 minutes, or until tender and white throughout, turning once. Remove toothpicks and serve. Serves six.
